Cookbook for Celiac Disease
February 18, 2020 - I'm excited to announce the release of my cook book exploring the transition to gluten free diet for those diagnosed with celiac disease. It provides a brief but compassionate guide to the lifestyle shift, practical tips to make the home gluten free, as well as 75 nourishing recipes. The recipes are real recipes that most people enjoy - full of flavor and nutrition, without restriction (except gluten of course). Most include options to adapt to be dairy and/or meat free depending on your needs.
Many moons ago, I had the honor of doing my graduate research in celiac disease with Beth Israel Deaconess Medical Center Celiac Center and Boston Children's Hospital. Patient after patient shared their challenges in finding a voice and making their needs met while living full lives. While I do not have celiac disease, I'm grateful for those who over the years shared their stories and creative solutions. And I'm thrilled to give voice and perspective to anyone trying to make sense of it all. If you love it, consider sharing a review on Amazon! Full disclosure, I do not receive any portion of the sales. So it really is genuinely about promoting the book if you find it helpful. |
Gluten Free Guide to College

In the spring of 2010, I surveyed and interviewed young adults living with celiac disease across the United States. I connected with 70 students and 10 college campuses in a survey, interviews, and focus group. The stories shared are summarized in this guide to provide recommendations to other students living with celiac disease on campus. The results of the study were published::
Panzer RM, Dennis M, Kelly CP, Weir D, Leichtner A, Leffler DA. Navigating the Gluten Free Diet in College. J Pediatr Gastroenterol Nutr. 2012 Jun 22.
The research project and guide were created by Rebecca (Panzer) Toutant, MA, RD, LDN, CDE as part of the Applied Learning Experience, Master’s in Health Communication program at Emerson College. Educational guidance was provided by celiac disease experts at Celiac Center at Beth Israel Deaconess Center (www.celiacnow.org) and Children’s Hospital, Boston (www.childrenshospital.org/celiac); all located in Boston, Massachusetts. The assistance of Daniel Leffler, MD; Melinda Dennis, MS, RD, LDN; Ciaran Kelly, MD; Dascha Weir, MD; and Alan M. Leichtner, MD, FAAP is gratefully acknowledged.
Thank you to all of the students, faculty, and staff for sharing their experiences and insights into the college experience with celiac disease. Without their help, this guide would not have been possible.
